Enjoy a unique gastronomic experience at the Parador de Chinchón with its “Jornadas del Cocido de Taba”. This emblematic dish, a local variant of the traditional cocido madrileño, stands out for its careful preparation with top quality ingredients and its unique incorporation of crayfish.

Served in clay dishes, the taba stew is the result of an ancient recipe that was rescued in 1998 through a process of gastronomic archeology, giving back to the diners the authentic taste of tradition. Experience an authentic culinary feast in a unique environment, where every bite connects you with the local history.

Chinchón Parador

Founded by the first Lords of Chinchón in the 15th century, the Parador is located in the former monastery of Nuestra Señora del Paraíso. It preserves its cloister, its original staircase and the primitive church, today transformed into a very special suite.

Located in the heart of the medieval village, the building has large gardens and a typical convent orchard, which, full of fruit trees, creates an ideal place to unwind. In the old stables of the monastery is the swimming pool, perfect for relaxing in a unique environment.

The Parador stands out for its spectacular glass cloister, where an exclusive collection of religious art is exhibited.

In the gastronomic field, El Convento Restaurant is an outstanding representative of Madrid's renovated traditional cuisine. In addition, El Bodegón, a thematic space, offers during the fall and winter a unique experience: the traditional cocido de taba.
